This recipe, when I first smelled it as I put it on the stove, almost made me vomit - that's when I knew I was on the right track! After adding all the ingredients, the smell became bearable and delicious - the taste, once allowed to simmer fully, is wonderfully complex - sour, sweet, tangy, spicy. This recipe serves as a base for my okonomiyaki sauce, but is fantastic in a multitude of applications!
Vegan Worcestershire Sauce
INGREDIENTS
- 1 cup white vinegar
- 1/2 cup brown sugar or blackstrap molasses
- 1/4 cup tamari
- 3 tablespoons vegan fish sauce
- 2 tablespoons tamarind puree
- 1.5 teaspoons garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon lemon pepper
- 1/2 teaspoon white pepper
- 1/2 teaspoon ground cloves
- 1/2 teaspoon allspice
- 1/2 teaspoon chilli powder
- A pinch of ginger powder
METHOD
- Combine all ingredients in the order they are written in a small saucepan and bring to boil. Simmer for at least 15 minutes before allowing to cool and using as desired. That's it!
