Cookbook Writing
Zacchary’s first book, Vegan Junk Food was published in 2020 and was once used as a political prop by Jacinda Ardern. The Vegan Butcher won the PETA Australia Vegan Cookbook of the Year 2021 and was named Nigella Lawson’s Cookbook of the Week, which Zacchary claims makes him the world’s number one vegan butcher/baker hybrid who can also do a backbend. The Vegan Baker is his third cookbook released in three years.
Recipe Development
Zac has served as the food editor for Plant Based News and as a food writer been featured in Women’s Weekly Food, Gourmet Traveller, Vogue US, Elle Magazine, The Big Issue and more. In a former life, he hosted classes focused on greek cooking and deep frying as well as being able to boast owning a pop-up ice creamery that went out of business after one day.
Commercial plant based meat products designed under contract by Zacchary Bird have been sold in every major supermarket in Australia and range from smaller, seasonal scales to year-round FMCG favourites in the plant based sausage, ham, chicken, beef and roast categories with specialties in both seitan (gluten protein) and gluten free formula production.
Presenting
On screen, Zac has presented recipes for Channel 10 Australia’s ‘Freshly Picked’ television show (seasons 1 - 3). As a guest, he’s cooked up a storm on Weekend Sunrise, Studio 10, ABC’s The History Listen and even in a paddock for upcoming Screen Australia series Cooking For Seamus. Zac’s wide experience in his field means he’s also a regular guest unpacking vegan topics for ABC Radio National, ABC Everyday and JOY FM.
